Chocolate-Peanut Butter Oatmeal Bars

Nothing beats the spectacular combo of chocolate and peanut butter. With these surprisingly wholesome bars, you get this amazing flavor atop a rich and delicious oat base. No baking involved!

These bars are made with quick-cooking oats. Note that 1/4 cup of uncooked quick-cooking oats is a low-FODMAP portion.
Chocolate-Peanut Butter Oatmeal Bars
Makes 9 bars
​INGREDIENTS
  • 2 cups quick-cooking rolled oats
  • 1/2 cup pure maple syrup
  • 5 Tbsp vegan butter or coconut oil
  • 1/2 tsp vanilla extract
  • 1/4 cup finely chopped walnuts
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup creamy peanut butter
DIRECTIONS
  1. ​Put the oats, maple syrup, butter, and vanilla extract in a medium saucepan. Cook over medium heat, stirring frequently, until the butter is melted and the mixture is bubbly.
  2. Remove from the heat and stir in the walnuts.
  3. Press the mixture evenly into an 8 x 8-inch baking pan.
  4. Put the chocolate chips and peanut butter in small saucepan. Heat over low heat, stirring frequently, until melted. Carefully spread over the oat mixture.
  5. Refrigerate until the topping is firm, about 1 hour.

Delicious! Just the right amount of sweetness to curb a sugar craving but not overly sweet. I've tried a lot of vegan dessert recipes and I'd have to say this is my favorite. Shared with my family who eat a lot of processed foods and sweets and they loved these bars too. I was just recently diagnosed with IBS and will definitely be trying more of your recipes.

Made these for the first time at the weekend after looking for some low FODMAP snack bars and they were exactly what I was looking for. They were so good in fact I now have to make more as I have eaten them all. I plan to use this recipe as a base an experiment with other nuts etc.
